Jano
Kolbaia

HEAD CHEF

The kitchen at Gobi is led by young and dynamic Georgian chef Jano Kolbaia. He began his journey in some of Tbilisi’s finest restaurants, gaining experience in both Georgian and Asian cuisines. Today, Jano reimagines Georgian gastronomy with confidence, blending tradition with modern flavors and presentation.

A MODERN READING
OF REGIONAL GEORGIAN RECIPES COMBINED WITH CHEF HAUTE CUISINE

The menu features traditional dishes from various regions of Georgia in the chef’s modern interpretation. We use ancient recipes, authentic products and spices, which were brought specially from Georgia for preparation

bread

The heart of Gobi is the bakery on the first floor. Here our chefs make bread, pies and the pivotal and traditional dish of Georgian cuisine, khachapuri, on a daily basis.

You can not only taste these pastries, but also witness the cooking process. A unique experience and an opportunity to learn about Georgian culture.

WINE

We approached the issue of wine list responsibly, because grapes are not just a fruit, they have become a symbol of rich culture and gastronomic heritage of Georgia.

We not only recreated an authentic Georgian cellar for storing bottles, but also selected 9 wineries for cooperation with the utmost care.

IS COZY AND ATMOSPHERIC: WOODEN FURNITURE, WARM DIM LIGHT, LUSH GREENERY AND HANDMADE CLAY DÉCOR

In the center of the space, there is a large wooden table. According to our plan, guests will be able to share it with others to keep the atmosphere of conviviality and well-being
